Feta and pickled vegetable salad

If you’re looking for a quick salad to rustle up for a lunch box or a lightning fast healthy evening meal – I have the salad for you!!

The great thing about this salad is that the pickles provide bite and acidity so it doesn’t need a dressing. It’s really just chopping and chucking into a bowl!

Ingredients

Serves 1

  • 2 tbsp chopped feta cheese
  • 2-3 pickled onions
  • 5-6 slices pickled beetroot
  • 1/4 of a romaine lettuce
  • 5 cherry tomatoes
  • 1/4 of a cucumber

Method

  1. Chop
  2. Chuck into a bowl!
