Fig and maple ricotta toasts

Figs again! This recipe for fig and maple ricotta toasts is a great idea for a weekend brunch, or you can make smaller toasts to serve as sweetish canapés at a party or barbecue. It couldn’t be simpler to make!

Adding maple syrup to the ricotta transforms this into a subtly sweet dish and pairs really well with the fresh figs. The finishing touch of the rosemary sugar rounds off the dish with a herby hint.

Ingredients

Serves 1

  • 1-2 pieces of your favourite bread (or smaller pieces if you’re making canapés)
  • 2 tbsp ricotta
  • 1 tsp maple syrup
  • 1-2 fresh figs
  • Small sprig rosemary
  • Caster sugar

Method

  1. Toast the bread.
  2. Stir the maple syrup into the ricotta and spread onto the toast. Top with slices of fresh fig.
  3. Finely chop the rosemary and take about 1/2 teaspoon and mix with the same amount of caster sugar. Sprinkle over the figs on toast and serve.
