For some reason we seem to have ended up with LOADS of carrots so we were looking for a recipe that really showcased the carrot in all its glory! This one seemed like a good option and although we used short thick ribbons of carrot, you could easily use a spiraliser for this and have carrot noodles instead.
09/06/2015: Cauliflower cheese with bacon bits – own recipe
So we needed a recipe to use up the leftover cauliflower that we bought to use up our leftover carrots…and the cycle continues! Simple cauliflower cheese made with a bechamel sauce poured over some cooked cauliflower and heated up in the oven and with added bacon bits for a real treat.
10/06/2015: Chicken, lemon and olive tagine – Leon
I was out this evening meeting a friend for a bit of shopping along Oxford Street and then getting a bite to eat. We wandered around for a bit and then decided to go to Leon. Their chicken, lemon, and olive tagine struck me as something pretty unusual that I wouldn’t likely find anywhere else so that seemed an obvious choice! It was really tasty and the flavours of the lemon and olive definitely complemented each other. I personally wasn’t a huge fan of the strips of lemon peel in the dish as I felt they slightly overwhelmed the dish. By coincidence, Mark had the same dish! He agreed that the lemon is a bit much, and also that the prices are just that little bit too high to really see this as a regular lunch destination.
11/06/2015: Smoked mackerel with sweet potato and chorizo quinoa – own recipe
I don’t know why but I really fancied mackerel tonight so I browsed Pinterest for some ideas. Mackerel, chorizo and sweet potato seemed like a common combination so I stirred the potato and chorizo into some quinoa and laid a generous amount of smoked, peppered mackerel over the top.

We found this recipe to use up our leftover sweet potato (definitely a theme with this post!) and it seemed like a winning combination. The recipe was simple but the serving sizes were really tiny. I wonder whether some salad recipes are geared towards pot lucks/parties where you only eat a small amount because it’s one part of a larger buffet? Rather than people actually wanting a whole dinner.
