What a weekend! I know I keep banging on about the gorgeous summer weather, but I just can’t help it because it’s so lovely. At times a little sticky, but that’s what ice lollies are for! Mark and I have been playing with our new ice cream maker lately, but nothing is easier to make than a homemade ice lolly. I love store lollies like twisters and good old retro fabs, but I think making your own and playing with different ingredients and flavours is so much fun.
Here, I’ve gone for the ultimate summer flavour combo. Zingy kiwi, cooling cucumber, and a hint of floral sweetness with my homemade elderflower cordial.
They’re so easy to make and they taste delicious. It’s great to have a stock of ice pops in the freezer for a hot day and these ones feel like an exciting treat. You can get a nice effect by putting some slices of kiwi along the sides of the moulds before pouring in the blended mixture.

Ingredients
- 4-6 kiwi fruits
- 1 cucumber
- 1/3 cup elderflower cordial
Method
Combine in a blender and freeze into ice pop moulds. Yep, that’s all.
